New mom Sandra Bullock talked about her son’s poop schedule and the New Orleans charter school she helped rebuild after Hurricane Katrina on Tuesday’s Today show.

Bullock didn’t dish about ex Jesse James (or his apparent new girlfriend Kat Von D,) with NBC’s Matt Lauer, instead focusing on her son Louis, whose adoption was recently finalized.

“As sterile as the room seemed, it felt so rich,” Bullock said of the formal completion of her adoption. “I did not circumvent. I wanted to do everything exactly the same way everyone else did. It was nice to have someone say, 'I think you're a fit parent.'"

Sandra calls little Louis, who was born in New Orleans, her “little Cajun cookie” who loves to dance and is generally “extraordinary.”

As for motherhood at 46, Sandra says: “No one understands the shift in prior about having a child in your life until you have a child in your life... It naturally shifted the day I met him. Now Louie’s got the stage."
