Kimora Lee Simmons Shares a Favorite Thanksgiving Recipe
Thanksgiving is a special time in my home. It’s a time when I get to slow down for a minute and appreciate and give thanks for all the unbelievable blessings in my life. It’s a time when I get to enjoy my family in all their glory and see the sparkle in each of them that makes me want to make their lives the best that they could possibly be. That’s a true blessing.
In keeping with wanting to make my family happy, I also want to keep them healthy. For that very reason, one of my fave KLS family vegan recipes is for some delicious Baked Sweet Potatoes and Apples . This delectable dish is a tradition in our home.
If you’re looking for something different, delicious and healthy this Thanksgiving, I dare you to give this dish a try and let me know how it turns out.
4 large or 6 medium sized sweet potatoes
2 tablespoons sesame oil
1/2 cup maple syrup
2 large apples, peeled, cored, and thinly sliced
Cinnamon (amount depends on preference but I keep it light but not too light)
Ground cloves (same applies)
1/3 cup apple juice
Preheat the oven to 350 degrees.
Bake your sweet potatoes until done but not overdone. When cool enough to handle, peel them and cut into 1/2-inch-thick slices.
Oil your casserole dish. Arrange half of the sweet potato slices on the bottom. Drizzle with half of the sesame oil, then half of the maple syrup. Top with the apple slices. Sprinkle lightly with the cinnamon and cloves. Repeat the layers, then pour the apple juice over the top.
Bake covered for 30 minutes, then uncovered for another 5-10. Then it’s ready to serve! Best served warm.
