Hey guys,

As you know, I’ve been on a smoothie kick throughout my pregnancy. Here’s the recipe of the smoothie I’m trying today! I’m going to replace the soy milk with almond milk and the sugar with truvia, though!

Here’s a clipping from the recent issue of OK! Magazine. I talk all about my diet and cravings! Here’s some of the Q&A below:

Healthiest thing I’ve eaten all week:
A green smoothie. I’ll take greens— either spinach, kale or collards— and blend them with water, then add fruit.

My go-to comfort food:
I love cheese. I love different hard cheeses to snack on. I love pizza with cheese. Cheese is my trap.

Least healthy thing I’ve eaten all week:
A bean-and-cheese-burrito— because I’m pregnant, it’s the last fast food I have any taste for.

Food I can’t stop eating:
Fun finger foods. A big plate of chicken fingers and fries is just so easy to keep picking on forever.

My favorite healthy dessert is an açaí berry smoothie recipe found in my favorite book about food, Kimberly Snyder’s Beauty Detox Solution. It tastes like chocolate milk, but is a lot better for you! I always keep the main ingredients— frozen acai berry packets, almond milk, raw cacao and a good sweetener (the book recommends stevia)— stocked at my house for anytime I have a sweet tooth. I usually find the açaí berry at Whole Foods or Gelson’s— it can be a little harder to find than the other ingredients.

Along with pumpkin and apple pies, I loved making this traditional French Christmas dessert for both Thanksgiving and Christmas. It’s called a Bûche de Noel and it’s delicious!!

Hope you’re all having fun getting ready for Thanksgiving tomorrow! I wanted to share my all-time favorite recipe, my mom’s pumpkin pie. I usually make it every year! Below are recipes for the crust and the filling. Let me know if you make it!

What’s your favorite Thanksgiving recipe? 

Mom’s Pumpkin Pie

Crust (makes two 9″ crusts):

• 2 C flour
• 1 tsp salt
• 2/3 C plus 2 T shortening
• 4-5 T ice cold water

Directions:
Measure flour and salt into bowl. Cut in shortening until it is very crumbly. Sprinkle in water 1 T at a time until all is moistened and dough cleans the side of the bowl. Gather into two balls; flatten. Roll on flour-covered surface to fit pie pan.

Filling (makes one pie):

• 3/4 C sugar
• 1/2 tsp salt
• 1 tsp cinnamon
•  1/2 tsp ginger
• 1/4 tsp cloves
• 2 T mollasses
• 2 eggs
• 1 (15 oz) can Libby’s pumpkin (100% pure pumpkin puree, NOT the can of pie filling!)
• 1 can (12 oz.) Carnation evaporated milk (NOT sweetened condensed!)

Directions:
Preheat oven to 425* F. Mix all ingredients with a whisk. Pour into shell and bake in preheated oven for 15 minutes. Reduce heat to 350* and continue baking for 40-50 minutes or until a knife inserted near center comes out clean.

Another Disney World dining favorite is California Grill in the Disney Contemporary Resort. It has one of the best menus in the resort and is one of the best places to view the Magic Kingdom fireworks. We had some delicious sushi and a créme brûlèe with a caramelized popcorn wafer.  Incredible!
